I got some lovely green beans the other day and wanted to prepare them a bit differently. I found this recipe online in a blog called Christie’s Corner. They looked beautiful and the combination of flavours seemed great, so I set out to make my version with the ingredients I had at home. The quantities are not exact, but the combination of them was so very tasty!
About four handfuls of fresh green beans, washed and trimmed (I cut the longer ones in half)
1 tablespoon olive oil
1 shallot, sliced
1 teaspoon sugar
1-2 handfuls of slivered almonds
2-3 dashes of smoked paprika
salt and pepper to taste
Place the green beans in a pot with salted boiling water and cook for about 4 minutes. Take the green beans out of the boiling water and immediately immerse in a bowl with cold water with ice. Let them cool in the ice water for a couple of minutes, then drain and set aside. Place the oil and shallot in a skillet over medium heat and cook for about 5 minutes, stirring often. Sprinkle the sugar on top and stir to combine, then add the almonds and stir again. Finally, add the green beans, the smoked paprika and salt and pepper to taste. Stir to combine well and serve.
