I must confess that the best Mexican dishes I’ve ever had have been cooked by my dear friends from Guadalajara. Last week one of those friends, Minerva, invited me over for tacos, which were absolutely delicious and so easy to make. So today I attempted to replicate Minerva’s tacos for dinner, and I’m happy to report they turned out pretty tasty! The amounts listed below are mere suggestions, just use what you have at home. I do however suggest that you find some good, soft corn tortillas.
1 tablespoon vegetable oil
4 chorizos, sliced
300 grams beef, sliced in thin strips
1 onion, chopped finely
1 large tomato, chopped
1 bell pepper, sliced in strips
1 jalapeño, chopped finely
Soft corn tortillas, heated on the grill or in the oven
Heat the oil in a pot on medium heat, then add the chorizo and beef and cook, stirring often, for about 10 minutes or until they are cooked. Add the onion, tomatoes, bell pepper and jalapeño, stir to incorporate all ingredients and let cook for about another 10 minutes. Add salt to taste.
Optional toppings: chopped lettuce, diced avocado, grated cheese, sour cream, chopped cilantro, etc.
Take a tortilla (preferably corn, not wheat), fill it with all these delicious goodies, and dig in!
