Teresa’s Nachos

During my time in Canada I’ve collected an array of wonderful friends from all walks of life. Teresa is one of those friends, a hard-working mom, daughter and sister from Guadalajara, Mexico with the biggest heart you can imagine. In our many get-togethers her nachos are always well received, because they are delicious and made with love. Here’s the recipe; there are no set quantities, this is one of those you can make with as many or as little of each of the ingredients as you like, although I recommend erring on the generous side!

Tortilla chips
Green onion, sliced finely
Red and yellow bell pepper, sliced finely
Tomatoes, diced
Grated cheese (cheddar, mozzarella, or a mix of cheese that will melt well)

On a baking pan place a layer of the tortilla chips, sprinkle the tomatoes, peppers and green onion on top, cover with a generous amount of cheese; and repeat, ending with plenty of cheese on top. Place in the oven at about 350 degrees until the cheese melts. Serve immediately. You can add other ingredients, it all depends on your tastes and likes, one that was a great suggestion was to add pulled pork or shredded beef on top!
