I met Kristine and Jeff when I first moved to Victoria, and I am lucky to count them among my friends. These peanut butter balls they make are quite famous and coveted by whoever has had the pleasure of trying them. After finally trying this holiday treat this year, I asked if they would share the recipe with me and, well… you!
Kristine tells me that Jeff’s mom makes them every Christmas, and they seem to be a very strong Christmas tradition from Atlantic Canada. So without further ado, I give you Mama George’s Peanut Butter Balls! And thanks to Kristine and Jeff for sharing!!
Makes around 3 dozen
1 cup smooth peanut butter
1 cup icing sugar
1 cup Rice Krispies
1 tablespoon softened butter or margarine
4 squares semi-sweet chocolate (you might need more)
2 tablespoons Parowax granules (use less than this, you will taste the wax if you use too much)
Combine first 4 ingredients into a bowl, use your hands to mix well. Shape into balls no bigger than 1″ (using a teaspoon helps). Chill in refrigerator for 2-3 hours on waxed paper lined cookie sheet. Melt chocolate & wax together in a double boiler. Drop balls one at a time into chocolate to coat. Place on waxed paper lined cookie sheet. You might need more chocolate than the recipe calls for. Refrigerate until hardened. They freeze really well and can be stored in Ziploc bags.
