Mashed Yams

This recipe is adapted from the cookbook published by Rebar, one of my favourite restaurants in Victoria, which is mostly vegetarian and where I always get a chance to appreciate just how delicious and tasty healthy food can be.

Ingredients:
1 kilo yams
1 cup water
1/4 cup butter
2 tablespoons honey
Juice of 2 limes
1 1/2 teaspoons salt
Chopped walnuts (optional)

Preparation:
Preheat the oven to 350. Peel and dice the yams, put in a baking pan with the water, cover with tin foil and cook for approximately 30 minutes or until the yams are cooked and soft.  Put the yams in a bowl and add the rest of the ingredients, except the walnuts. Mash everything until smooth and well mixed together (for a smoother texture you can use a food processor). Add more salt or pepper if necessary. For an extra crunch, sprinkle the chopped walnuts on top (optional), serve hot. If you need to reheat, spread on a baking pan and put in the oven for 15 to 20 minutes, until heated through.
